π Ingredients
- #Soup Base;
- 1 medium onion β finely diced.. 2 cloves garlic β minced
- 1 medium potato β peeled, diced small
- 1 medium carrot β peeled, diced small
- 100 g cauliflower β chopped into small florets
- 80 g sweetcorn kernels β fresh or frozen
- 80 g button mushrooms β finely chopped
- 700 ml vegetable stock β rich, low-sodium
- 200 ml coconut cream (thick part) β or unsweetened soy cream
- 2 tbsp nutritional yeast β for rich savoury depth
- 2 tbsp plain flour or cornstarch β mixed with 3 tbsp water to make a slurry
- 1 tbsp olive oil β for sautΓ©ing.. 1 tsp dried thyme or mixed herbs
- Β½ tsp ground black pepper.. Salt β to taste
- #Pastry Lid;
- 1 sheet vegan puff pastry β thawed if frozen, ensure no butter/egg used
- 2 tbsp plant milk (soy or oat) β for brushing
- 1 tsp maple syrup β optional, for extra golden finish
- #For Serving;
- Fresh parsley or thyme β finely chopped, for garnish
- Extra cracked black pepper

Preheat oven to 200Β°C (400Β°F). Lightly grease 4 individual ovenproof soup bowls or ramekins.

Heat olive oil in a pot over medium heat. SautΓ© onion 3β4 minutes until soft and translucent. Add garlic and cook 1 minute more until fragrant.

Add potato, carrot, cauliflower, and mushrooms. Stir and cook 3β4 minutes. Pour in vegetable stock. Bring to a gentle simmer, cover, and cook 15 minutes until vegetables are tender.

Stir in corn kernels, coconut cream, nutritional yeast, herbs, salt, and pepper. Simmer 5 minutes. Stir in the flour slurry and cook 3β5 minutes more until the soup thickens to a rich, creamy consistency β it should be thick enough to coat a spoon. Taste and adjust seasoning.

Ladle the hot soup evenly into the prepared bowls, filling to about 5 mm below the rim.

Roll out the puff pastry slightly on a floured surface. Cut circles 2β3 cm wider than the rim of each bowl. Drape a pastry circle over each bowl, press the edges gently to seal, and trim away excess. Cut a small slit in the centre to let steam escape.

Brush the pastry tops lightly with plant milk (and a tiny touch of maple syrup if you like extra shine). Bake 20β25 minutes until puffed up and deep golden brown.

Let rest 3β5 minutes before serving β the soup will be very hot! Garnish with fresh parsley and extra black pepper. Break the pastry lid and stir it into the soup for the perfect bite π₯§π²β¨
