Sweet Potato & Buckwheat Burgers

🛒 Ingredients

  • #Burger Patties;
  • 300 g sweet potato — peeled, diced, steamed until tender
  • 150 g cooked buckwheat — well drained
  • 80 g rolled oats — blitzed into coarse flour (or use oat flour)
  • 30 g fresh parsley or coriander — finely chopped
  • 2 spring onions — thinly sliced.. 2 tbsp chickpea flour — to bind
  • 1 tbsp lemon juice.. ½ tsp ground cumin
  • ½ tsp smoked paprika.. ½ tsp garlic powder.. ½ tsp salt
  • Freshly ground black pepper — to taste.. 2–3 tbsp olive oil — for cooking
  • #To Serve;
  • 4 soft burger buns — vegan.. Lettuce, rocket, or spinach
  • Sliced tomato... Cucumber slices
  • Red cabbage — shredded.. Avocado or vegan mayonnaise
  • Sweet chilli, tahini sauce, or mustard — as desired

👩‍🍳 Instructions

    Mash the steamed sweet potato in a bowl until smooth. Add the cooked buckwheat, stir to combine, and let cool slightly.

    Stir in the oat flour, chickpea flour, fresh herbs, spring onions, lemon juice, spices, salt, and pepper. Mix well until the mixture holds together firmly. If too soft, add a little more oat flour.

    Divide the mixture into 4 equal portions. Shape each into a round patty about 2 cm thick, pressing firmly so it holds its shape.

    Heat olive oil in a frying pan over medium heat. Cook the patties for 4–5 minutes on each side until golden and firm. Alternatively, bake at 200°C (400°F) for 25–30 minutes, turning halfway through.

    Assemble your burgers: spread sauce on the buns, layer with lettuce, tomato, cucumber, red cabbage, and the warm patty. Top with avocado or extra sauce. Serve immediately and enjoy! 🍔🍠
