
Kostir og Galar β Icelandic Creamy Celery & Leek Soup

π Ingredients
- #Main Ingredients;
- 4 large celery stalks β thinly sliced, leaves reserved for garnish
- 2 leeks β white & light green parts only, thoroughly cleaned and sliced
- 1 medium potato β peeled, cut into small cubes
- 1 small onion β finely chopped.. 2 garlic cloves β crushed and minced
- 1 litre vegetable stock.. 2 tbsp olive oil or vegan butter
- 100 ml thick coconut cream or plant-based cooking cream β for richness
- #Seasoning;
- Β½ tsp salt β adjust to taste.. ΒΌ tsp freshly ground black pepper
- Pinch of nutmeg β optional
- 1 tsp fresh lemon or lime juice β added at the end
- #To Garnish;
- Fresh celery leaves
- A light drizzle of olive oil

Heat oil in a large pot over medium heat. SautΓ© onion and leeks for 4β5 minutes until soft. Add garlic and cook for 1 more minute.

Add sliced celery and potato cubes. Stir and cook for 2β3 minutes.

Pour in the vegetable stock. Bring to a gentle boil, reduce heat, cover and simmer for 15 minutes until all vegetables are very tender.

Remove from heat. Blend until perfectly smooth and creamy using an immersion or standard blender.

Return to low heat. Stir in coconut cream or plant cream, salt, pepper, and nutmeg. Warm gently β do not boil vigorously.

Remove from heat. Stir in citrus juice, then taste and adjust seasoning.

Serve hot, garnished with fresh celery leaves and a drizzle of olive oil π΅β¨
