🛒 Ingredients

  • #Main Ingredients;
  • 600 g medium carrots — peeled, left whole or halved lengthwise
  • 2 large red onions — cut into thick wedges, root end kept intact
  • 3 tbsp olive oil
  • #Glaze;
  • 2 tbsp maple syrup or agave nectar.. 1 tbsp balsamic glaze or balsamic vinegar
  • 1 tbsp soy sauce or tamari.. 1 clove garlic — minced
  • ½ tsp smoked paprika
  • ¼ tsp chilli flakes — optional, for gentle warmth
  • #Seasoning & Garnish;
  • ¾ tsp sea salt — adjust to taste
  • ½ tsp freshly ground black pepper
  • 1 tbsp fresh thyme sprigs — plus extra for topping
  • 1 tsp lemon juice — for brightness, added at the end

👩‍🍳 Instructions

    Preheat oven to 200°C (400°F). Line a large baking dish or tray with parchment paper.

    Place carrots and onion wedges in the dish. Drizzle with olive oil and toss gently to coat.

    Whisk together maple syrup, balsamic glaze, soy sauce, garlic, smoked paprika, and chilli flakes. Pour over the vegetables and toss until evenly coated.

    Sprinkle with salt, pepper, and half the thyme. Arrange in a single layer.

    Roast for 30–35 minutes, turning halfway through, until carrots are tender, golden, and sticky, and onions are caramelised at the edges.

    Remove from oven. Drizzle with lemon juice, taste and adjust seasoning. Garnish with fresh thyme sprigs and serve warm 🥕✨
