Ertépuré — Vegan Green Pea Purée

Ertépuré is a simple yet deeply satisfying classic — fresh or frozen green peas simmered until tender, then blended into a luxuriously smooth, bright green cream. Enriched with plant-based butter, a touch of creamy plant milk, and gently sautéed onion, it highlights the peas’ natural sweetness and vivid colour without any dairy. 🛒 Ingredients

  • #Main Ingredients;
  • 400 g green peas — fresh or frozen (thawed)
  • 2 tbsp vegan butter or extra-virgin olive oil
  • 60–80 ml unsweetened plant milk (soy / oat / almond) — adjust to reach desired consistency
  • 1 small onion — finely diced, or 2 spring onions — thinly sliced
  • 1 small garlic clove — minced (optional)
  • #Seasoning;
  • ½ tsp salt — adjust to taste.. ¼ tsp freshly ground black pepper
  • Pinch of sugar — to enhance natural sweetness
  • 1 tsp fresh lemon juice — optional, for bright, balanced flavour
  • 1 tbsp fresh mint or parsley — finely chopped
  • #Garnish;
  • Drizzle of olive oil
  • Extra fresh mint or parsley leaves
  • A twist of cracked black pepper

👩‍🍳 Instructions

    Bring a pot of lightly salted water to a boil. Add the peas and cook for 5–7 minutes until tender yet still bright green. Drain well — reserve a splash of cooking water if you prefer a looser texture.

    While the peas cook, heat the vegan butter or olive oil in a small pan over medium heat. Sauté the onion for 3 minutes until soft and sweet. Add the garlic and cook for 30 seconds until fragrant.

    Transfer the cooked peas, onion mixture, plant milk, salt, pepper, sugar, and lemon juice into a blender or food processor. Blend until perfectly smooth and creamy — leave slightly chunky if you prefer more texture.

    Taste and adjust the seasoning. Stir in most of the fresh herbs, keeping a little aside for garnish.

    Serve warm, topped with a drizzle of olive oil, extra herbs, and cracked pepper. Delicious with crusty bread, roasted potatoes, or as a vibrant side dish 🍽️💚✨
