- 400 ml unsweetened soy or oat milk (full‑fat works best)
- 100 ml coconut cream (thick part from a chilled can)
- 80 g dark cocoa powder (unsweetened)
- 70–80 g sugar or maple syrup (adjust to taste)
- 35 g cornstarch (cornflour).. 1 pinch fine sea salt
- ½ tsp pure vanilla extract
- 1 tbsp neutral vegetable oil or refined coconut oil (for extra silkiness)

Sift the cocoa powder, cornstarch, sugar, and pinch of salt into a mixing bowl. Whisk thoroughly until all dry ingredients are evenly combined and no lumps remai

Pour in approximately half of the plant milk. Whisk continuously and vigorously until the mixture transforms into a completely smooth, glossy, lump-free chocolate paste. Stir in the vanilla extract and vegetable oil until fully incorporated.

Pour the remaining plant milk and coconut cream into a saucepan. Warm gently over medium-low heat, stirring occasionally, until steam begins to rise — do not allow the mixture to come to a rolling boil.

Reduce the heat to low. Slowly pour the chocolate paste into the warm milk while whisking steadily and continuously. Keep whisking as you heat the mixture, working patiently for 3 to 5 minutes. The cream will gradually thicken and become smooth and glossy. Continue whisking until it bubbles gently and coats the back of a spoon.

Remove the saucepan from heat immediately. Whisk for another minute while the mixture cools slightly to maintain its silky texture. Pour evenly into serving cups or bowls. Place a piece of plastic wrap directly against the surface of the cream to prevent a skin from forming.

Allow the cream to cool down to room temperature. Transfer to the refrigerator and chill thoroughly for at least 2 to 3 hours until fully set and firm.

Remove from the refrigerator just before serving. Top with chopped nuts, fresh berries, a dusting of cocoa powder, or shaved dark chocolate as desired. Serve chilled and enjoy!
