🛒 Ingredients

  • #Fresh Fruits (choose approx. 5–6 kinds, about 1½–2 cups each):
  • 1 cup dragon fruit (pink or white flesh), cubed
  • 1 cup avocado, scooped or cubed
  • 1 cup honeydew or cantaloupe melon, cubed
  • 1 cup mango or papaya, cubed
  • 1 cup jicama or apple, peeled and cubed
  • ½ cup red or green grapes, whole or halved
  • #Pink Coconut Broth:
  • 400 ml coconut milk (canned or fresh)
  • 600–800 ml water (adjust thickness to taste)
  • 80–120 g sugar or coconut palm sugar, adjust sweetness to taste
  • 1–2 tbsp dragon fruit juice or syrup (for natural pink colour)
  • ½ tsp pandan paste or 2 fresh pandan leaves, knotted
  • A pinch of salt.. Ice cubes, as needed
  • #For Garnish:;
  • Fresh mint leaves

    Prepare the pink broth: In a saucepan, combine water, sugar, pandan leaves, and the pinch of salt. Bring to a gentle simmer over medium heat, stirring until the sugar completely dissolves. Remove from heat, take out the pandan leaves, and stir in the coconut milk and dragon fruit juice or syrup until evenly blended into a lovely soft pink colour. Let the broth cool completely, then chill in the refrigerator for at least 30 minutes.

    Cut the fruits: Wash, peel, and cut all your chosen fruits into uniform bite-sized cubes or shapes. Keep each fruit separate or arrange them by colour — the more variety, the more beautiful the bowl! 🎨

    Assemble the dessert: Take a large serving bowl or individual bowls. Arrange the mixed fruits beautifully — place the avocado and softer fruits last so they stay on top and keep their shape.

    Add broth & ice: Pour the chilled pink coconut broth generously over the fruits until they are partially submerged. Add plenty of ice cubes to keep it beautifully cold and refreshing.

    Serve & enjoy! Garnish with fresh mint leaves on top for a lovely fresh aroma. Give it a gentle stir before eating so the creamy pink broth coats every piece of fruit. Cool, sweet, creamy, and wonderfully refreshing! 🩷🥑🍇
