Prepare the base: In a large bowl or jug, add the sattu powder. Pour in about Β½ cup of the chilled water first, and whisk thoroughly until there are absolutely no lumps remaining. It should form a smooth, thick paste.

Add remaining ingredients: Pour in the rest of the chilled water and whisk well until completely blended. Add lemon juice, your chosen sweetener, chopped mint leaves, roasted cumin powder (if using), and the pinch of salt.
- 3
Whisk to combine: Whisk vigorously for about 30β45 seconds until everything is fully dissolved and the drink is frothy and smooth. Taste and adjust β add more lemon for tang, more sweetener if needed, or extra water if you prefer it lighter.

Serve chilled: Pour into tall glasses filled with ice cubes. Garnish generously with extra finely chopped mint leaves on top.

Enjoy immediately! Sattu Pani is best enjoyed fresh β give it a quick stir before drinking as the flour may settle at the bottom. Cool, refreshing, and wonderfully nourishing! πΏπ
