- 2 thick slices crusty whole-grain or sourdough bread
- ½ cup smooth hummus — homemade or store-bought, at room temperature
- #Harissa Black Bean & Tomato Mix;
- 1 tbsp olive oil.. 2 cloves garlic — thinly sliced
- 1–2 tsp harissa paste — adjust to preferred heat level
- 1 cup (1 can) black beans — drained and rinsed
- 250 g cherry tomatoes — halved
- 2 spring onions — white and green parts separated, thinly sliced
- 1 tbsp fresh lime juice — plus extra wedges for serving
- Salt and black pepper — to taste

- Fresh basil leaves — torn
- Extra harissa paste — for drizzling
- Lime wedges — for squeezing

Toast the bread: Toast the thick slices of bread until beautifully golden and crisp around the edges. Set aside while preparing the topping — it should be warm and ready to assemble.

Sauté aromatics: Heat the olive oil in a frying pan over medium heat. Add the sliced garlic and the white parts of the spring onion. Sauté gently for 2 minutes until fragrant and soft — do not let the garlic burn.

Build the harissa flavour: Stir in the harissa paste and cook for 30 seconds to release its rich, spicy oils. Add the cherry tomatoes and a pinch of salt. Cook for 3–4 minutes until the tomatoes soften and begin to burst, releasing their lovely juices.

Simmer the beans: Add the black beans and stir well to coat in the tomato-harissa sauce. Simmer gently for 3–4 minutes until everything is hot, the sauce thickens slightly, and the beans are tender. Stir in the fresh lime juice, taste, and adjust salt, pepper, or extra harissa until perfectly balanced — spicy, tangy, and bright.

Assemble and serve: Spread a thick, generous layer of hummus over each slice of warm toast. Spoon the spicy black bean and tomato mixture over the hummus — pile it high! Scatter with the green parts of the spring onion, fresh torn basil, a drizzle of extra harissa, and serve with lime wedges for squeezing over top. Enjoy warm!
