
Date & Cinnamon Chia Pudding
A beautifully creamy, nourishing pudding made from chia seeds soaked in rich plant milk and naturally sweetened with soft medjool dates instead of refined sugar. 🛒 Ingredients

- 6 tbsp chia seeds — white or black work perfectly
- 2 cups (480 ml) almond milk or oat milk — unsweetened and creamy
- #Natural Sweetener & Flavour;
- 6–8 Medjool dates — pitted, soaked in warm water 5 minutes, then blended smooth
- 1 tsp ground cinnamon — plus extra for dusting
- ½ tsp pure vanilla extract
- Pinch of fine sea salt — brings out all the lovely flavours

- Dried goji berries — as desired
- Pumpkin seeds (pepitas) — as desired
- Extra date syrup or chopped dates — optional, for extra sweetness

Prepare the date paste: Soak the pitted dates in warm water for 5 minutes to soften. Drain well, then blend with a splash of the plant milk until completely smooth and creamy — no lumps should remain. This replaces refined sugar and adds wonderful caramel-like sweetness.

Mix the base: In a bowl or jar, whisk together the chia seeds, date paste, remaining plant milk, ground cinnamon, vanilla extract, and pinch of salt. Whisk thoroughly until the date paste is fully incorporated and no clumps of chia remain.

Rest and thicken: Let the mixture sit for 5 minutes, then whisk once more to ensure the chia seeds don't settle at the bottom. Cover and refrigerate for at least 4 hours — or ideally overnight — until it transforms into a thick, silky pudding consistency.

Give it a final stir: Before serving, give the pudding a good stir. If it feels too thick, stir in an extra splash of milk until it reaches your preferred creaminess. Taste and adjust — add a little more cinnamon or date sweetness if you wish.

Serve and enjoy: Spoon into beautiful glass cups. Top generously with goji berries, pumpkin seeds, a light dusting of extra cinnamon, and any other toppings you love. Serve chilled — it keeps beautifully in the fridge for up to 3 days!
