π©βπ³ Instructions
- 1
Make the BBQ beans: In a small saucepan over medium heat, combine the drained beans, BBQ sauce, ketchup, maple syrup, smoked paprika, garlic powder, and water. Simmer gently for 8β10 minutes until thick, warm, and the flavours meld together. The beans should be coated in rich, sticky sauce β not too dry. Keep warm.
- 2
Prepare the slaw: In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and pepper. Add the shredded purple cabbage and toss until evenly coated. Set aside β the cabbage will soften slightly and become perfectly crisp-tender.
- 3
Grill the sausages: Heat a grill pan, skillet, or outdoor grill over medium heat. Lightly oil the surface. Place the vegan sausages onto the hot pan and cook for 8β12 minutes, turning frequently, until beautifully golden with charred marks all around and heated through completely.
- 4
Toast the buns: While the sausages cook, open the hot dog buns and place them cut-side down on the grill or in a toaster for 1β2 minutes until golden and slightly crisp around the edges β this prevents the bun from becoming soggy!
- 5
Assemble generously: Place a grilled sausage inside each toasted bun. Spoon a generous amount of warm BBQ beans over and around the sausage. Top with a colourful pile of creamy purple slaw. Drizzle attractively with yellow mustard, extra BBQ sauce, and creamy white sauce in stripes. Finish with a scattering of crispy fried onions and fresh chives. Serve immediately while hot and crisp!
