Roasted Sweet Potato & Kale Quinoa Bowls

🛒 Ingredients

  • #For the Roasted Vegetables & Chickpeas;
  • 600 g sweet potato — peeled and cut into 1.5 cm cubes
  • 2 cans (400 g each) chickpeas — drained, rinsed, and patted very dry
  • 2 tbsp olive oil.. 1 tsp ground cumin.. ½ tsp smoked paprika
  • ½ tsp garlic powder.. ½ tsp onion powder.. Salt and black pepper — to taste
  • #For the Base & Greens;
  • 200 g quinoa (mixed white and red looks beautiful) — rinsed well
  • 480 ml water or vegetable stock
  • 1 large bunch curly kale — stems removed, leaves finely chopped
  • 1 tsp olive oil.. Pinch of salt — for massaging
  • #For the Maple-Tahini Dressing;
  • 60 g smooth tahini.. 3 tbsp lemon juice — freshly squeezed
  • 2 tbsp maple syrup.. 1 clove garlic — grated or very finely minced
  • 2–3 tbsp warm water — to adjust consistency
  • Salt and white pepper — to taste
  • #Toppings;
  • 60 g dried cranberries or sour cherries
  • 60 g plant-based feta or crumbled almond cheese
  • Extra black pepper — to finish

    Roast the sweet potato and chickpeas: Preheat oven to 200°C (400°F). Place cubed sweet potato and thoroughly dried chickpeas onto a large baking tray. Drizzle with olive oil, sprinkle with cumin, smoked paprika, garlic powder, onion powder, salt, and plenty of black pepper. Toss well until everything is evenly coated, then spread out in a single layer — do not overcrowd. Roast for 25–30 minutes, stirring halfway through, until the sweet potato is tender and golden at the edges, and the chickpeas are crisp and crunchy.

    Cook the quinoa: While the vegetables roast, combine rinsed quinoa and water or stock in a small saucepan. Bring to a rolling boil, then reduce heat to low, cover tightly, and simmer gently for 15 minutes until all liquid has been absorbed and quinoa is fluffy. Remove from heat and leave covered for 5 minutes to steam, then fluff gently with a fork.

    Prepare the kale: Place the finely chopped kale into a large bowl. Drizzle with 1 teaspoon of olive oil and a pinch of salt. Use your hands to massage the kale firmly for 2–3 minutes until it darkens, softens, and reduces in volume — this removes bitterness and makes it tender and delicious. Set aside.

    Make the dressing: In a jar or small bowl, whisk together tahini, lemon juice, maple syrup, and grated garlic. The mixture will thicken at first — gradually stir in warm water, one tablespoon at a time, until you reach a smooth, pourable consistency. Season with salt and white pepper, then taste and adjust — it should be creamy, tangy, and lightly sweet.

    Assemble the bowls: Divide the warm quinoa evenly between 4 bowls. Top with a generous portion of massaged kale. Spoon over the roasted sweet potato cubes and pile the crispy spiced chickpeas on top. Scatter with dried cranberries and crumble plant-based feta over each bowl.

    Dress and serve: Drizzle generously with the creamy maple-tahini dressing. Finish with a twist of black pepper. Serve warm, or allow to cool and store portions in the refrigerator for up to 3 days — ideal for meal prep!
