  • 300–350 g mixed mushrooms (button, chestnut, or cremini) β€” sliced
  • 2 thick slices crusty bread (baguette, sourdough, or ciabatta)
  • 2 cloves garlic β€” minced.. 2–3 sprigs fresh thyme β€” leaves only
  • 2 tbsp fresh parsley β€” chopped, plus extra to garnish
  • 2 tbsp olive oil or vegan butter
  • #Seasoning & Sauce;
  • 1 tbsp soy sauce or tamari.. Β½ tbsp balsamic vinegar β€” optional
  • ΒΌ tsp salt β€” adjust to taste.. ΒΌ tsp ground black pepper
  • 1 tbsp water or vegetable stock.. Extra virgin olive oil β€” for drizzling

    Prep ingredients: Wipe mushrooms clean and slice into even thickness β€” not too thin so they keep their juicy texture. Mince garlic finely. Strip thyme leaves from woody stems. Chop parsley. Slice bread ready for toasting. Having everything prepared makes cooking smooth and fast.

    Toast the bread: Brush bread lightly with a little olive oil. Toast in a pan, oven, or toaster until golden brown and crisp on both sides. Set aside on warm plates β€” crisp toast holds the mushrooms perfectly without becoming soggy.

    SautΓ© mushrooms: Heat olive oil or vegan butter in a wide pan over medium-high heat. Add mushroom slices in a single layer β€” do not overcrowd the pan or they will steam instead of browning. Cook undisturbed for 2–3 minutes until golden on one side, then flip and cook another 2 minutes. This brings out their rich, earthy flavour.

    Add aromatics: Lower heat to medium. Add minced garlic and thyme leaves. Stir gently for 1 minute until fragrant β€” do not let garlic burn or it will turn bitter. The wonderful aroma will fill your kitchen!

    Finish the sauce: Pour in soy sauce, balsamic vinegar if using, and a splash of water or stock. Season with salt and plenty of black pepper. Stir and simmer gently for 2–3 minutes until the liquid reduces slightly and coats every mushroom slice in a glossy savoury glaze. Taste and adjust seasoning if needed.

    Assemble & serve: Spoon the hot mushrooms generously over the warm toasted bread. Scatter fresh parsley on top, drizzle with a little extra olive oil, and sprinkle with extra black pepper.
