Tumis Sawi Putih Jamur Tiram (Stir-Fried White Cabbage & Oyster Mushrooms)

A light, comforting, and quick home-style stir-fry — tender crisp white napa cabbage and meaty oyster mushrooms cooked together with aromatic garlic, shallots, and fresh chilli in a savoury light sauce. The cabbage stays soft yet slightly crisp, while the mushrooms turn wonderfully tender and soak up every bit of flavour. Naturally plant-based, simple to make, and perfect with steamed rice!

🛒 Ingredients

  • #Main Ingredients;
  • ½ head white napa cabbage (sawi putih) — cut into bite-sized pieces
  • 200 g fresh oyster mushrooms — torn or cut into strips, trimmed
  • 3 cloves garlic — thinly sliced.. 3 shallots — thinly sliced
  • 2–3 fresh red chillies — sliced diagonally (adjust to taste)
  • 2 stalks spring onions — sliced, optional.. 3 tbsp neutral cooking oil
  • #Sauce & Seasoning;
  • 1 tbsp soy sauce.. 1 tsp sweet soy sauce or coconut sugar
  • ½ tsp sea salt — adjust to taste.. ½ tsp ground white pepper
  • 80–100 ml water or vegetable stock.. Pinch of sugar — to balance flavour

    Prep ingredients: Separate oyster mushrooms, trim tough bases, tear or cut into even strips. Rinse gently and squeeze out excess water. Cut napa cabbage into wide slices, separate thick ribs from tender leaves if needed, rinse and drain well. Slice garlic, shallots, and chillies.

    Sauté aromatics: Heat oil in a wok or pan over medium heat. Add garlic and shallots, stir-fry 1 minute until fragrant and soft. Add chillies and toss briefly.

    Cook mushrooms first: Add oyster mushrooms to the pan. Stir-fry 2–3 minutes until they soften and release their moisture, then continue cooking until liquid reduces slightly.

    Add cabbage: Add the thicker cabbage ribs first, stir-fry 1 minute. Then add the tender cabbage leaves. Pour in soy sauce, sweet soy sauce, water, salt, pepper, and sugar. Stir gently to combine.

    Finish quickly: Cook uncovered over medium heat for 3–5 minutes, tossing occasionally, until cabbage is tender-crisp and mushrooms are fully cooked. Do not overcook — cabbage should remain light and not mushy.

    Serve: Taste and adjust seasoning. Top with spring onion if using. Serve hot immediately with steamed rice!
