🛒 Ingredients
- #Main Ingredients;
- 250 g firm tofu — cut into cubes or slices
- 300 g fresh bean sprouts — rinsed, trimmed, drained well
- 3 cloves garlic — thinly sliced.. 3 shallots — thinly sliced
- 2–3 fresh red chillies — sliced diagonally (adjust to taste)
- 2 stalks spring onions — cut into short lengths
- 3 tbsp neutral cooking oil
- #Sauce & Seasoning;
- 1 tbsp soy sauce or tamari.. 1 tsp sweet soy sauce or coconut sugar
- ½ tsp sea salt — adjust to taste.. ½ tsp ground white pepper
- 1–2 tbsp water — optional.. Pinch of sugar — to balance flavour

Prep ingredients: Press tofu lightly to remove excess water, then cut into cubes. Rinse bean sprouts thoroughly and drain very well — moisture makes them soggy. Slice garlic, shallots, chillies, and spring onions.

Fry tofu (optional): Heat 2 tbsp oil in a wok or pan over medium heat. Add tofu cubes and pan-fry 2–3 minutes until lightly golden on all sides. Remove and set aside briefly.

Sauté aromatics: In the same pan, add remaining oil if needed. Sauté garlic and shallots 1 minute until fragrant and soft. Add chillies and toss briefly.

Stir-fry quickly: Turn heat to high. Add bean sprouts, fried tofu, and spring onions. Drizzle with soy sauce, sweet soy sauce, salt, pepper, sugar, and a splash of water if needed.

Toss & serve: Stir-fry rapidly for only 2–3 minutes — bean sprouts should stay crisp, not turn soft. Taste and adjust seasoning. Serve immediately while hot and crunchy with steamed rice!
