  • #Main Ingredients;
  • 300 g dried wheat noodles or fresh noodles β€” cooked according to package, drained, tossed with 1 tsp oil
  • 3 cloves garlic β€” minced.. 1 cm fresh ginger β€” grated
  • 1 medium carrot β€” cut into thin matchsticks
  • Β½ red or yellow bell pepper β€” thinly sliced
  • 1 cup bok choy or choy sum β€” chopped.. Β½ cup bean sprouts
  • 2 spring onions β€” sliced, separate white and green parts
  • 3–4 tbsp neutral cooking oil β€” divided
  • #Vegan Egg Strips (topping, optional);
  • 2 tbsp soy sauce or tamari
  • 1Β½ tbsp sweet soy sauce or coconut sugar syrup
  • 1 tsp sesame oil.. Β½ tsp ground white pepper.. ΒΌ tsp salt β€” adjust to taste
  • Β½ tsp chilli flakes or sliced fresh chilli β€” optional, for heat
  • #Garnish;
  • 3 tbsp roasted peanuts β€” roughly crushed
  • Fresh coriander leaves,, Lime wedges

    Prepare noodles: Cook noodles according to package instructions until tender but still firm. Drain well, rinse briefly with cold water to stop cooking, then toss with 1 tsp oil to prevent sticking. Set aside.

    Make vegan egg strips (if using): Whisk chickpea flour, water, turmeric, and salt until smooth. Heat 1 tbsp oil in a small pan over medium heat. Pour in a thin layer of batter, cook 1–2 minutes until set, flip carefully, and cook 1 more minute. Roll up and slice into thin strips. Set aside.

    SautΓ© aromatics: Heat remaining oil in a wok or large pan over high heat. Add garlic, ginger, and the white parts of spring onion. Stir-fry for 30 seconds until wonderfully fragrant β€” do not burn.

    Cook vegetables: Add carrot, bell pepper, and bok choy. Stir-fry for 2–3 minutes until crisp-tender. Add bean sprouts and chilli (if using), toss briefly.

    Combine everything: Add the cooked noodles to the pan. Drizzle with soy sauce, sweet soy sauce, sesame oil, white pepper, and salt. Toss and stir-fry vigorously for 3–4 minutes until noodles are hot, evenly coloured, and slightly crispy in spots.

    Finish & serve: Toss in the green parts of spring onion. Taste and adjust seasoning if needed. Plate up, top generously with chickpea omelette strips, crushed peanuts, fresh coriander, and a squeeze of fresh lime. Enjoy hot!
