
Vegan Garlic Mushroom Toast

- 300 g mixed mushrooms β button, chestnut or portobello, thickly sliced
- 2β3 thick slices crusty bread β sourdough or ciabatta works beautifully
- 2 tbsp olive oil or dairy-free vegan butter
- #Aromatics & Seasoning
- 3 cloves garlic β thinly sliced or minced
- 1 tbsp fresh thyme leaves β plus extra for garnish
- 1 tbsp fresh parsley β chopped, plus extra for garnish
- 1 tsp balsamic vinegar β optional, for depth of flavour
- Β½ tsp sea salt β adjust to taste
- ΒΌ tsp freshly cracked black pepper
- Pinch of chilli flakes β optional, for gentle warmth

Toast the bread: Toast your bread slices until golden and crisp around the edges. Set aside on warm plates.

SautΓ© mushrooms: Heat olive oil or vegan butter in a pan over medium-high heat. Add sliced mushrooms in a single layer β cook undisturbed for 2β3 minutes until golden on one side. Then toss and cook for another 3β4 minutes until deeply golden and tender.

Add aromatics: Add the garlic, thyme, salt, pepper, and chilli flakes if using. SautΓ© for 1β2 minutes more until fragrant β do not let the garlic burn.

Finish the flavour: Drizzle with balsamic vinegar if using, toss well, then remove from heat. Stir in most of the fresh parsley. Taste and adjust seasoning.

Assemble & serve: Pile the hot garlic mushrooms generously onto your warm toast. Sprinkle with extra fresh parsley, thyme, and a final crack of black pepper. Enjoy immediately while hot and crisp!
