  • 1 medium carrot — peeled, cut into thin matchsticks
  • 2 tbsp vegetable oil — for stir-frying

  • 3 shallots — thinly sliced
  • 1–2 fresh red chillies — sliced, optional for gentle heat
  • ½ tsp sea salt — adjust to taste
  • ½ tsp ground white pepper
  • 1 tsp coconut sugar or cane sugar — to balance flavour
  • 1 tbsp light soy sauce or tamari
  • 2 tbsp water — optional, for extra moisture

    Prepare vegetables: Wash and trim French beans, cut into thin strips or diagonal slices. Peel carrot and cut into even matchsticks. Keep both separate or ready together — they cook at nearly the same speed.

    Sauté aromatics: Heat oil in a wok or large pan over medium-high heat. Add garlic, shallots, and chillies. Stir-fry for 30–60 seconds until fragrant and just beginning to turn golden — do not burn.

    Stir-fry vegetables: Add carrot first, stir-fry for 1–2 minutes. Then add French beans. Toss rapidly over high heat for another 2–3 minutes until vegetables are crisp-tender, bright coloured, and still have a pleasant crunch.

    Season and finish: Sprinkle salt, white pepper, and sugar. Drizzle with soy sauce. Add 1–2 tablespoons water if you like a little light sauce. Toss everything together well for another minute to blend flavours. Taste and adjust seasoning.
