Vegan Mielie Pap

Mielie Pap is the beloved staple of South African cuisine — a simple, wholesome porridge made from maize meal, slowly cooked until soft, creamy, and velvety smooth. 🛒 Ingredients

  • 1 cup (180 g) maize meal (mieliemeel)
  • 3½ cups (800 ml) water — divided
  • ½ tsp fine sea salt — adjust to taste
  • #For Serving;
  • 1–2 tbsp melted vegan butter or vegetable oil
  • Extra salt, sugar, or syrup — to taste

    Make a smooth paste: In a bowl, mix the maize meal with 1½ cups of cold water until completely smooth and no lumps remain. This ensures a silky texture.

    Bring water to boil: Pour the remaining 2 cups of water into a pot, add salt, and bring to a rolling boil.

    Cook the pap: Slowly pour the maize meal mixture into the boiling water while stirring constantly. Reduce heat to low, cover with a lid, and simmer gently for 20–25 minutes. Stir frequently, especially toward the end, to prevent sticking and ensure even cooking. Cook until the pap is thick, smooth, and tender with no grainy texture. Add a little more water if it becomes too thick — adjust consistency to your preference.

    Finish and serve: Remove from heat. Stir in melted vegan butter or oil. Taste and adjust salt or sweetness as desired. Serve warm as a side dish with stews, curries, or chakalaka, or enjoy simply on its own.
