A classic Cape favourite β a beautiful ring-shaped cake bursting with bright, sunshiny lemon flavour. Soft, tender, and wonderfully moist, with fresh lemon zest and juice woven through every crumb, then topped with a smooth, tangy lemon glaze and fresh lemon slices. The perfect balance of bright citrus and gentle sweetness makes it utterly irresistible. Prepared entirely plant-based without eggs, dairy, or butter β yet every bit as light, fluffy, and delicious as the traditional version.

- #For the Lemon Cake;
- 300 g all-purpose flour.. 2 tsp baking powder
- Β½ tsp bicarbonate of soda (baking soda).. ΒΌ tsp salt
- 150 g cane sugar.. 2 tbsp lemon zest (from about 2 lemons)
- 180 ml unsweetened plant-based milk (soy, oat, or almond)
- 80 ml vegetable oil.. 3 tbsp fresh lemon juice
- 1 tsp vanilla extract.. 1 tbsp apple cider vinegar or lemon juice
- #For the Lemon Glaze & Garnish;
- 150 g icing sugar.. 2β3 tbsp fresh lemon juice
- Β½ tsp lemon zest.. Thinly sliced fresh lemon β for garnish

Prepare the batter: Preheat oven to 180Β°C (350Β°F). Lightly grease and flour a 20β22 cm ring or bundt cake pan. In a large bowl, whisk together flour, baking powder, bicarbonate of soda, and salt. In a separate bowl, mix sugar, lemon zest, plant-based milk, oil, lemon juice, vanilla extract, and vinegar until smooth.

Combine and bake: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or whisk until just combined β do not overmix. Pour the batter evenly into the prepared pan. Bake for 35β40 minutes, or until a skewer inserted into the centre comes out clean.

Cool the cake: Remove from oven and let cool in the pan for 10 minutes. Carefully turn out onto a wire rack to cool completely before glazing.

Make the glaze: In a small bowl, whisk icing sugar, lemon juice, and lemon zest until smooth and thick yet pourable. Adjust consistency β add a little more juice if too thick, or extra icing sugar if too runny.

Glaze and serve: Drizzle the glaze generously over the cooled cake, allowing it to run down the sides. Garnish with fresh lemon slices. Serve as a delightful tea-time treat or dessert.
