🛒 Ingredients
- #Fresh Fruits & Vegetables;
- 1 small pineapple — peeled, cored, cut into chunks
- 2 crisp apples — cored, cut into chunks
- 1 medium cucumber — peeled partially, sliced or cut into chunks
- Optional: mango, papaya, jicama, or other seasonal fruits
- #Sweet-Sour-Spicy Brine;
- 500 ml water.. 3–4 tbsp cane sugar — adjust to taste
- 2–3 tbsp white vinegar or lime juice.. 1 tsp sea salt — adjust to taste
- 1 tsp sea salt — adjust to taste
- 2–3 fresh red chillies — sliced, adjust heat to taste
- 2 cloves garlic — crushed (optional)

Prepare the fruits: Peel, core, and cut all fruits and cucumber into bite-sized chunks. Arrange in a glass or ceramic bowl.

Make the brine: In a saucepan, combine water, sugar, salt, vinegar or lime juice, sliced chillies, and garlic (if using). Heat gently, stirring until sugar and salt dissolve completely. Bring just to a simmer, then remove from heat.

Pour and soak: Pour the warm brine directly over the prepared fruits. Allow to cool to room temperature, then cover and refrigerate for at least 30–60 minutes to let the flavours infuse and the fruits absorb the tangy liquid.

Serve: Serve chilled with plenty of the brine. Enjoy as a refreshing snack or side dish. Best consumed within 24 hours while the fruits remain crisp.
