👩🍳 Instructions
- 1
Mix smoothly: In a bowl, whisk sorghum meal with about 1 cup of cold water or plant-based milk until completely smooth and no lumps remain. This ensures a silky texture.
- 2
Simmer: Bring the remaining 3 cups of liquid to a gentle boil in a pot. Slowly pour in the sorghum mixture while stirring constantly. Reduce heat to low, add salt, and cover.
- 3
Cook thoroughly: Simmer gently for 25–35 minutes, stirring frequently especially toward the end to prevent sticking. Cook until the porridge is smooth, thick, and tender with no gritty texture. Add a little more liquid if too thick — adjust consistency to your preference.

Flavour and serve: For savoury — adjust salt, add pepper or herbs. For sweet — stir in sweetener and spice to taste. Serve warm as a comforting breakfast, side dish, or accompaniment to stews and curries.
