
Vegan Umxhaxha
Umxhaxha is a cherished traditional dish from the Eastern Cape — a smooth, creamy porridge made from tender pumpkin or butternut slowly simmered with sweetcorn and a little mealie meal (maize meal) until rich, golden, and beautifully thick. It balances the natural sweetness of pumpkin with wholesome corn and a gentle, comforting texture. Traditionally enjoyed as a nourishing meal or side, this version is prepared entirely plant-based — no butter, milk, or animal ingredients — yet retains all the warmth, colour, and authentic flavour of the original. 🛒 Ingredients
- 500 g pumpkin or butternut — peeled, seeded, diced
- 250 ml sweetcorn kernels (fresh or frozen)
- 3–4 tbsp maize meal (mealie meal) — adjust for thickness
- 500–600 ml water or vegetable stock
- 1 tsp cane sugar — optional, to enhance natural sweetness
- ½ tsp fine sea salt — adjust to taste

Cook the pumpkin: Place diced pumpkin in a medium pot with water or stock. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until pumpkin is very soft and tender.

Mash or blend: Remove from heat. Mash the pumpkin roughly with a fork or potato masher — leave some texture for authenticity, or blend partially for a smoother consistency. Return to low heat.

Add corn and thicken: Stir in sweetcorn kernels, salt, and sugar (if using). Gradually sprinkle in maize meal while stirring constantly to avoid lumps. Simmer gently for another 10–15 minutes, stirring frequently, until the porridge thickens and the maize meal is fully cooked. Add a little more water if too thick — umxhaxha should be soft, creamy, and spoonable.

Adjust and serve: Taste and adjust salt or sweetness as needed. Serve warm as a comforting meal on its own, or as a traditional accompaniment to stews and curries.
