- 3 tbsp vegetable oil.. 2 cloves garlic — minced.. 1 tsp lemon zest
- 2 tbsp fresh lemon juice.. ½ tsp black pepper.. 1 tsp sea salt — adjust to taste

- ½ tsp ground cumin — optional, for warm depth

Prepare the amadumbe: Peel amadumbe thoroughly — wear gloves if possible to avoid skin irritation. Cut into uniform chunks so they cook evenly. Rinse well under cold water to remove excess starch, then pat completely dry with a clean cloth or paper towel. Drying well helps them crisp up when roasted.

Season thoroughly: Place dried amadumbe in a large bowl. Drizzle with oil, then add garlic, lemon zest, lemon juice, salt, pepper, chilli, and cumin (if using). Toss well until every piece is evenly coated with the oil and spice mixture.

Roast to perfection: Preheat oven to 190°C (375°F). Spread amadumbe in a single layer on a large baking tray lined with parchment paper. Do not overcrowd — use two trays if needed. Roast for 35–45 minutes, turning halfway through, until the outside is golden and crisp and the inside is tender when pierced with a fork. Larger pieces may need a little longer.

Finish and serve: Remove from oven. Taste and adjust salt or lemon juice if needed. Transfer to a serving plate, sprinkle generously with fresh coriander and extra chilli if desired. Serve warm with lemon wedges for squeezing.
