🛒 Ingredients
- #Morogo Greens;
- 500 g fresh Morogo (e.g., amaranth leaves, blackjack, wild spinach) or substitute with a mix of spinach and kale — tough stems removed, coarsely chopped
- #Aromatics & Seasoning;
- 1 medium onion — finely diced
- 1 ripe tomato — diced (reserve some for garnish)
- 1–2 fresh green chillies — finely chopped (adjust heat to taste)
- 2 cloves garlic — minced.. 2 tbsp vegetable oil.. Salt and black pepper — to taste

Prepare the greens: Wash Morogo thoroughly. If using tougher greens like kale, you can blanch them quickly in boiling water for 1–2 minutes, then immediately plunge into ice water to retain colour, before draining and chopping. This helps tenderise them. Spinach does not typically require blanching.

Sauté aromatics: Heat oil in a large pan or pot over medium heat. Add diced onion and cook for 5–7 minutes until soft and translucent. Add minced garlic and chopped green chillies, and sauté for 1–2 minutes until fragrant.

Add greens and tomato: Add the chopped Morogo greens to the pan. If using spinach, it will reduce significantly, so add in batches if necessary. Stir-fry for 5–8 minutes, tossing frequently, until the greens are tender and have wilted down. Add most of the diced tomato and cook for another 3–5 minutes until the tomato softens slightly.

Season and finish: Season with salt and black pepper to taste. Continue to stir-fry for another minute to ensure all flavours are well combined.

Serve: Serve warm, garnished with the reserved fresh diced tomato. Morogo is excellent as a side dish with pap (a traditional maize porridge), rice, or any other main meal.
