  • #Base & Aromatics;
  • 1 medium onion β€” diced.. 2 cloves garlic β€” minced
  • 1 tbsp fresh ginger β€” grated.. 2 tbsp vegetable oil
  • 1 medium carrot β€” peeled and roughly chopped
  • 2 medium potatoes β€” peeled, diced
  • 1 large tart-sweet apple (e.g. Granny Smith) β€” peeled, cored, diced, reserve some for garnish
  • #Spices & Liquids;
  • 2 tbsp medium curry powder β€” adjust heat to taste.. Β½ tsp ground turmeric
  • ΒΌ tsp chilli powder β€” optional, for extra warmth.. Β½ tsp ground cumin
  • 400 ml vegetable stock.. 200 ml unsweetened soy cream or coconut cream
  • 1 tbsp lemon juice.. 1 tsp cane sugar β€” optional, to balance flavour
  • Salt and black pepper β€” to taste
  • #Garnish;
  • Remaining fresh apple β€” finely diced
  • Fresh parsley or coriander β€” chopped
  • Black pepper β€” freshly cracked

    SautΓ© aromatics: Heat oil in a large pot over medium heat. Add onion and cook 5 minutes until soft and translucent. Stir in garlic, ginger, curry powder, turmeric, cumin and chilli powder. Cook gently 1 minute until fragrant to release the spice oils.

    Simmer the base: Add carrot, potato and most of the diced apple. Pour in vegetable stock and bring to a gentle boil. Reduce heat to low, cover, and simmer 20 minutes until all vegetables are completely tender.

    Blend and finish: Remove from heat. Stir in soy cream or coconut cream. Use an immersion blender to puree until perfectly smooth and velvety. Return to low heat. Add lemon juice, sugar if needed, salt and pepper. Taste and adjust spice, sweetness or acidity to achieve a balanced flavour β€” warm, savoury, with a hint of sweetness.

    Serve: Ladle hot soup into bowls. Top generously with reserved fresh apple cubes, chopped herbs and a twist of black pepper. Enjoy immediately while hot.
