
Vegan ANZAC Biscuits
Golden, buttery biscuits packed with rolled oats and desiccated coconut, held together with rich golden syrup. π Ingredients
- 1 cup rolled oats.. 1 cup desiccated coconut β unsweetened
- 1 cup all-purpose flour.. ΒΎ cup brown sugar or coconut sugar
- ΒΌ tsp salt.. Β½ cup coconut oil β solid, not melted
- β cup golden syrup.. 2 tbsp water.. Β½ tsp baking soda

Prep & mix dry ingredients: Preheat oven to 170Β°C (340Β°F). Line two baking trays with parchment paper. In a large bowl, mix oats, coconut, flour, sugar, and salt β stir well to combine.

Make syrup mixture: In a small saucepan or microwave-safe bowl, combine coconut oil and golden syrup. Heat gently until melted and smooth. Stir in the 2 tbsp water, then add baking soda β watch it foam up!

Combine dough: Pour the hot syrup mixture straight into the dry ingredients. Stir quickly and thoroughly until everything is evenly moistened and holds together when squeezed.

Shape & bake: Roll tablespoons of mixture into balls. Place on baking trays 5β―cm apart β they spread as they bake. Flatten slightly with your hand or a fork. Bake 12β15 minutes until deep golden all over. They will still feel soft when hot β do not overbake.

Cool & set: Leave on the hot trays for 15 minutes β this is when they firm up and turn crisp! Transfer carefully to a wire rack once fully set.
