
Chocolate & Mint Layered Mousse
A stunning two-layer dessert β rich, velvety dark chocolate mousse below and bright, refreshing mint mousse above, beautifully swirled and topped with chocolate drizzle and fresh mint. π Ingredients
- #Base (Shared for Both Mousses);
- 1 cup raw cashews β soaked in hot water 1 hour, drained well
- 400β―ml full-fat coconut cream β chilled overnight, thick part only
- β cup maple syrup or powdered sugar
- 2 tbsp coconut oil β melted.. 1 tbsp lemon juice
- 1 tsp vanilla extract.. Pinch of sea salt
- #Dark Chocolate Mousse;
- ΒΌ cup unsweetened cocoa powder
- 50β―g dark vegan chocolate (70% cocoa) β melted and cooled
- 1β2 tbsp plant milk β to adjust consistency
- #Fresh Mint Mousse;
- 1β1.5 tsp natural mint extract (or 1 tbsp fresh mint leaves, finely blended & strained)
- A tiny drop natural green food colouring (optional)
- #Garnish;
- Melted dark chocolate β for drizzling
- Fresh mint sprigs.. Dusting of cocoa powder

Prepare the base cream: In a high-speed blender, combine drained cashews, thick coconut cream, maple syrup, melted coconut oil, lemon juice, vanilla, and salt. Blend 3β4 minutes until perfectly smooth, silky, and creamy β no lumps at all. Divide the cream equally into two separate bowls.

Make chocolate mousse: Return one half of the cream to the blender. Add cocoa powder, melted cooled chocolate, and 1 tbsp plant milk. Blend until smooth and deep chocolate-brown. Taste and add extra sweetener if needed.

Make mint mousse: Stir mint extract gently into the second bowl of cream. Add green colouring a tiny drop at a time until you get that lovely soft mint-green shade. Taste β add a little more mint if you prefer it stronger.

Layer & swirl: Spoon alternating layers of chocolate mousse and mint mousse into glasses β or swirl them together gently with a spoon for that beautiful marbled effect. Tap glasses gently on the counter to settle and remove air bubbles.

Chill & set: Cover and refrigerate at least 4 hours, ideally overnight, until firm and set. The mousse firms up beautifully as it chills.

Garnish & serve: Drizzle melted chocolate over the top in thin lines. Add a fresh mint sprig and a light dusting of cocoa powder. Serve cold β best enjoyed within 3 days.
