
Patladzhani s Chesan i Magdanoz — Bulgarian Eggplant with Garlic & Parsley
Chunks of eggplant cooked until meltingly tender and golden, then tossed while still warm with plenty of crushed garlic, fresh bright parsley, sunflower oil, and a touch of vinegar. The heat softens the garlic just enough to release its fragrance, while the parsley adds a fresh, vibrant contrast. Soft, garlicky, and deeply satisfying — a classic Bulgarian meze or side dish, completely plant-based and delicious served warm or at room temperature!

🛒 Ingredients
- #Eggplant Base;
- 1 large eggplant (approx. 500–600 g) — peeled or partially peeled, cut into chunks
- 3–4 tbsp sunflower oil.. ½ tsp sea salt — plus extra for draining
- #Garlic & Parsley Dressing;
- 4–5 large garlic cloves — crushed or very finely minced
- 1 large bunch fresh parsley — leaves only, finely chopped
- 1 tbsp wine vinegar or apple cider vinegar
- 1 tbsp extra sunflower oil — for finishing
- Black pepper — to taste.. Optional: pinch of dried savoury or thyme

Prep eggplant: Place eggplant chunks in a colander, sprinkle generously with salt, and let rest 15–20 minutes to draw out bitterness and excess moisture. Rinse lightly and pat very dry with paper towels — this ensures better texture and less oil absorption.

Cook until golden & tender: Heat sunflower oil in a large pan over medium heat. Add eggplant in a single layer — cook in batches if needed. Sauté 8–10 minutes per side, turning gently, until soft, golden, and tender all the way through. Alternatively, roast at 200°C (400°F) for 20–25 minutes until soft and caramelised.

Toss warm with aromatics: Transfer hot cooked eggplant into a bowl. Immediately add crushed garlic, most of the parsley, vinegar, extra oil, salt, and pepper. Toss very gently — the warmth releases the garlic flavour and lets the dressing absorb beautifully.

Rest & serve: Let stand 10–15 minutes at room temperature so flavours meld. Taste and adjust salt or vinegar. Sprinkle with remaining fresh parsley right before serving. Enjoy warm or cool — even better the next day!
