Yaki Onigiri are beloved Japanese grilled rice balls — plain white rice shaped into neat triangles, pan-grilled until golden and wonderfully crispy on both sides, then brushed generously with a rich, umami-packed soy glaze. The outside develops a satisfying crunch while the inside stays soft and tender, seasoned with aromatic nori, sesame, and a hint of sweetness. Perfect as a snack, light meal, or side — simple, comforting, and naturally plant-based!

🛒 Ingredients

  • #Rice Base;
  • 3 cups cooked short-grain white rice (Japanese rice — best for stickiness)
  • 1–2 tbsp warm water (to shape rice easily)
  • #Savoury Glaze;
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp mirin (vegan mirin — use rice wine + sugar, or substitute 1 tbsp rice vinegar + 1 tsp sugar)
  • 1 tsp sugar (adjust to taste).. ½ tsp grated fresh ginger (optional, adds depth)
  • 1 tsp toasted sesame oil
  • #For Grilling & Toppings;
  • 1–2 tbsp neutral oil (vegetable, canola, or rice bran oil)
  • 1 tbsp toasted white sesame seeds
  • 1 tsp dried seaweed flakes (aonori or crushed nori)
  • Pinch of black pepper (optional)

    Shape the rice: Prepare clean hands lightly dampened with warm water — this prevents sticking. Take approx. ½ cup warm cooked rice per portion. Press firmly and shape into smooth triangles with slightly flattened sides — compact well so they hold their shape while grilling. Let rest 5 minutes to firm up.

    Make the glaze: In a small bowl, whisk together soy sauce, mirin, sugar, ginger, and sesame oil until sugar dissolves. Set aside — this is your savoury glaze.

    Grill until golden: Heat a non-stick pan over medium heat with a thin layer of oil. Place rice balls gently into the pan — do not overcrowd. Cook 4–5 minutes per side, turning carefully, until all surfaces are golden-brown and crispy.

    Brush with glaze: Reduce heat to low. Brush every side generously with your prepared glaze — let it bubble and caramelize lightly, 30–60 seconds per side. Avoid burning — glaze sugars darken quickly!

    Finish & serve: Transfer to a plate, sprinkle immediately with toasted sesame seeds and seaweed flakes. Enjoy warm — crispy outside, fluffy inside, rich umami flavour in every bite!
