
Spicy Soy & Scallion Tofu Bowl
Golden, crumbled tofu cooked until beautifully crisp and tossed in a vibrant, glossy spicy soy sauce — rich, savoury, and perfectly balanced with gentle heat and aromatic sweetness. Mixed with fresh scallion stalks and toasted sesame seeds, then served over fluffy white rice. 🛒 Ingredients
- #Crispy Tofu Base;
- 400 g extra-firm tofu — pressed well, crumbled into small chunks
- 2 tbsp cornstarch or potato starch.. 2 tbsp neutral oil — for pan-frying
- #Spicy Soy Glaze;
- 3 tbsp light soy sauce.. 1 tbsp dark soy sauce
- 2 tbsp maple syrup or coconut sugar.. 1 tbsp rice vinegar
- 1–2 tbsp gochugaru / chilli flakes (adjust heat to taste)
- 1 tbsp chilli oil or sesame chilli crisp (optional, extra heat)
- 2 garlic cloves — minced.. 1 tsp grated fresh ginger
- 2 tbsp water.. 1 tsp cornstarch + 1 tbsp water — slurry
- #Finish & Serve;
- 4–5 stalks fresh scallion — cut into 3–4 cm lengths
- 1 tbsp toasted white sesame seeds.. 2 bowls hot steamed rice

Prep & crisp the tofu: Press tofu thoroughly, then crumble into bite-sized chunks. Toss with cornstarch until lightly coated — this creates that perfect golden crispness.

Pan-fry to golden: Heat oil in a pan over medium-high heat. Spread tofu in a single layer — cook undisturbed 3–4 minutes until deeply golden underneath. Flip and cook 3–4 minutes more until crisp all over.

Make the spicy glaze: Whisk together light soy, dark soy, maple syrup, vinegar, chilli flakes, chilli oil, garlic, ginger, and water. Pour into the pan with tofu — simmer 1 minute. Stir in slurry and cook 1–2 minutes until thick, glossy, and clinging beautifully.

Add scallion: Toss scallion stalks into the pan and stir-fry 1–2 minutes until bright green and tender-crisp. Remove from heat.

Serve: Spoon fluffy rice into bowls. Top generously with the spicy tofu mixture — glaze and all. Sprinkle heavily with toasted sesame seeds and enjoy hot!
