🛒 Ingredients

  • #Base;
  • 400 g cooked chickpeas (1 can, drained and rinsed — reserve some liquid)
  • 3 tbsp tahini (sesame paste) — for richness and creaminess
  • 2 tbsp extra virgin olive oil — plus extra for drizzling
  • #Aromatics & Seasoning;
  • 2 garlic cloves — lightly crushed or sautéed for milder flavour
  • 1 tbsp lemon juice — fresh.. 1 tsp apple cider vinegar
  • ½ tsp ground cumin.. ½ tsp smoked paprika — optional, for depth
  • ¼ tsp black pepper.. ½–¾ tsp fine sea salt — adjust to taste
  • #Fresh Herbs;
  • 2 tbsp fresh parsley — chopped
  • 1 tbsp fresh thyme or rosemary — chopped (optional)
  • #For Serving;
  • Extra olive oil — for drizzling
  • Fresh herbs or paprika — for garnish

    Combine main ingredients: Place drained chickpeas, tahini, olive oil, garlic, lemon juice, vinegar, cumin, smoked paprika, salt, and pepper into a food processor or high-speed blender.

    Blend to perfection: Pulse and blend until smooth and creamy. Add reserved chickpea liquid or water — 1 tbsp at a time — until you reach your preferred consistency; thicker like traditional pâté or slightly lighter for easy spreading. Scrape down sides as needed.

    Fold in fresh herbs: Add chopped parsley and thyme/rosemary. Pulse briefly just to combine — keeping tiny herb specks adds lovely texture and colour. Taste and adjust salt, lemon, or spices to your liking.

    Chill & meld flavours: Transfer to a serving bowl or airtight container. Drizzle top lightly with olive oil to seal in moisture. Refrigerate for at least 30 minutes before serving — chilling firms texture and lets flavours beautifully develop.

    Serve: Garnish with extra fresh herbs, a sprinkle of paprika, and a final drizzle of olive oil. Enjoy with crusty bread, toasted baguette slices, crackers, or fresh vegetable sticks!
