- ½ small kabocha pumpkin (approx. 400–500 g), seeds removed, cut into 5 cm wedges with skin on
- 150 ml water or kombu + shiitake dashi broth.. 2 tbsp soy sauce
- 2 tbsp mirin (vegan — confirm no animal‑derived ingredients)
- 1 tbsp coconut sugar or cane sugar
- 1 tsp fresh ginger, peeled and cut into thin matchsticks
- Optional: pinch of salt to taste

Prep the pumpkin: Cut kabocha into chunky wedges or thick slices — keep the skin on, it holds the shape and looks beautiful. Trim any hard woody stem parts. Rinse quickly.

Arrange in pan: Place pumpkin pieces skin‑side down in a single layer in a wide, shallow pot. Pour in the water or dashi broth, soy sauce, mirin, and sugar. Scatter the ginger matchsticks on top.

Simmer gently: Bring to a gentle simmer over medium heat. Reduce heat to low, place a small lid or parchment paper directly over the pumpkin (drop‑lid technique), and simmer 12–15 minutes. Do NOT boil rapidly — pumpkin will fall apart!

Check doneness: Pierce with a skewer — it should slide through effortlessly. If still firm, simmer 2–3 minutes more.

Rest & serve: Turn off heat and let the pumpkin cool gently in the broth for 5–10 minutes — it absorbs all the wonderful flavour as it rests! Serve warm, topped with extra ginger. Spoon a little broth over each piece.
