
Vegan Peanut Butter Toast Sandwich (Boterham met Pindakaas)
A generously topped slice of crusty bread, slathered with smooth, rich peanut butter and piled high with fresh, colourful ingredients β crisp cucumber, tangy sweet-sour onions, creamy avocado, red onion, and a drizzle of sweet chilli sauce. Finished with crushed roasted peanuts for extra crunch. Sweet, salty, creamy, fresh, and perfectly balanced β a delicious, satisfying lunch or snack, completely dairy-free and egg-free!

- 1 thick slice crusty rustic bread (sourdough or wholemeal works beautifully)
- 2β3 tbsp smooth or crunchy peanut butter (100% peanut, no honey added β vegan)
- ΒΌ small cucumber, thinly sliced.. ΒΌ avocado, thinly sliced.. Few thin slices red onion
- 2β3 tbsp quick pickled onions (or sweet-sour onion slices)
- 1β2 tbsp sweet chilli sauce (vegan version)
- 1 tbsp roasted peanuts, roughly chopped
- Optional: crispy fried onion bits or sesame seeds

Toast the bread: Lightly toast the bread until golden and firm around the edges β this gives a lovely sturdy base that holds all the toppings perfectly.

Spread the peanut butter: While the bread is still warm, spread a generous, thick layer of peanut butter all the way to the edges. Let it melt slightly into the bread for extra flavour.

Layer the fresh ingredients: Arrange cucumber slices neatly over the peanut butter as the first layer. Top with pickled onions, then fresh avocado slices and red onion rings β stack them loosely for height and beautiful colour.

Drizzle & finish: Drizzle generously with sweet chilli sauce over the whole stack. Scatter the chopped roasted peanuts on top for wonderful crunch and nutty flavour. Add a few crispy onion bits if you like extra texture.

Serve immediately: Enjoy right away while the bread is crisp and the ingredients are fresh and cool β the perfect contrast of creamy, crunchy, sweet, and tangy!
