Vegan Fish‑Style Bites (Visboer / Fishless Fingers)

Golden, crisp breaded bites with a tender, flaky texture and delicate sea‑like flavour — exactly like traditional fish fingers or visboer, but completely plant‑based! The interior is soft and flaky, coated in a beautifully golden, crunchy crust. Served with creamy vegan tartare sauce and fresh lemon wedges. Perfect for a classic “fish and chips” meal, lunch, or snack — satisfying, delicious, and 100% cruelty‑free!

🛒 Ingredients

  • #Flaky “Fish” Base;
  • 1 block (approx. 400 g) firm or extra‑firm tofu — pressed very dry
  • 3 tbsp chickpea flour.. 2 tbsp nutritional yeast
  • 1 tbsp dried seaweed flakes (nori or dulse) — gives authentic “sea” flavour
  • 1 tbsp lemon juice.. 1 tsp onion powder.. 1 tsp garlic powder
  • ½ tsp dried dill.. ½ tsp salt.. ¼ tsp white pepper.. 1 tsp soy sauce or tamari
  • 1–2 tbsp unsweetened plant milk (only if needed to bind)
  • #Crispy Coating;
  • 60 g all‑purpose flour.. ½ tsp salt + pinch pepper
  • 80 g plant milk mixed with 1 tbsp lemon juice (sour milk binder)
  • 120 g fine breadcrumbs (panko works great for extra crunch)
  • ½ tsp paprika
  • #Vegan Tartare Sauce;
  • 4 tbsp vegan mayonnaise.. 1 tbsp finely diced gherkins / pickles
  • 1 tsp capers, chopped.., 1 tsp fresh lemon juice
  • 1 tsp fresh dill, chopped.. Pinch of salt and pepper

    Make the base: Crumble the well-pressed tofu into a bowl or food processor. Add chickpea flour, nutritional yeast, seaweed flakes, lemon juice, soy sauce, onion powder, garlic powder, dill, salt, and pepper. Pulse or mix gently — do NOT blend smooth. Keep it coarse and flaky so it resembles fish texture. It should hold firmly when squeezed. If too dry, add 1 tbsp plant milk.

    Shape & chill: Form the mixture into thick fingers or chunky bite shapes. Arrange on a plate and chill in the refrigerator for 30 minutes — this firms them up so they hold shape while breading and cooking.

    #Bread them: Prepare three separate bowls:

    Bowl 1: flour mixed with salt and pepper

    Bowl 2: plant milk + lemon juice mixture

    Bowl 3: breadcrumbs mixed with paprika Dip each piece in order: flour → milk mixture → breadcrumbs. Press the crumbs on firmly for a thick, crunchy crust.

    Oven method (recommended): Preheat oven to 200 °C (400 °F). Arrange on a parchment-lined baking tray. Lightly brush or spray with oil. Bake 15–18 minutes, turning halfway through, until deep golden and crisp all over.

    Pan-fry method: Shallow-fry in hot oil over medium heat for 3–4 minutes per side until golden and crisp.

    Make tartare sauce: In a small bowl, stir together vegan mayonnaise, diced gherkins, capers, lemon juice, fresh dill, salt, and pepper. Chill until ready to serve.

    Serve: Plate the crispy visboer bites. Serve warm with plenty of fresh lemon wedges and a generous portion of tartare sauce. Enjoy immediately while hot and crisp!
