  • 6–7 medium apples (approx. 1.2–1.5 kg), peeled, cored, and sliced
  • 3–4 tbsp maple syrup or coconut sugar (adjust to apple sweetness)
  • 2 tbsp lemon juice.. 2 tbsp cornstarch
  • 1½ tsp ground cinnamon.. ÂĽ tsp ground nutmeg.. ÂĽ tsp ground ginger (optional)
  • 1 tsp pure vanilla extract.. 2 tbsp water or apple juice.. Pinch of fine sea salt

  • 120 g rolled oats.. 60 g all‑purpose flour (or almond flour for gluten‑free)
  • 60 g chopped pecans or walnuts.. 50 g coconut sugar or brown sugar
  • 1½ tsp ground cinnamon.. 60 g melted vegan butter or coconut oil
  • 1 tbsp maple syrup.. ½ tsp pure vanilla extract.. Pinch of fine sea salt

    Prep: Preheat oven to 180 °C (350 °F). Lightly grease a 20×28 cm (8×11 inch) baking dish.

    Make the filling: In a large bowl, toss apple slices with lemon juice. Add sweetener, cornstarch, cinnamon, nutmeg, ginger, vanilla, water, and salt. Stir until apples are evenly coated and no dry lumps remain. Pour into the baking dish and spread out evenly.

    Make the topping: In a separate bowl, mix oats, flour, chopped pecans, sugar, cinnamon, and salt. Stir in melted vegan butter, maple syrup, and vanilla. Mix with your hands until moist, clumpy crumbs form — squeeze some into small chunks for extra crunch.

    Assemble & bake: Scatter the topping evenly over the apples. Bake on the middle shelf for 35–40 minutes until the fruit is bubbling around the edges and the topping is deep golden brown and crisp. If it browns too quickly, cover loosely with foil after 25 minutes.
