  • #Vegan Puff Pastry;
  • 250 g plain all‑purpose flour.. ÂĽ tsp fine sea salt
  • 180 g cold vegan block butter (very cold, cubed).. 100–120 ml ice‑cold water
  • #Chocolate Filling;
  • 150 g vegan dark chocolate (chunks or batons)
  • 1 tsp coconut oil (optional, makes chocolate creamier)
  • #Topping;
  • 30 g melted vegan dark chocolate.. 1 tsp coconut oil
  • Desiccated coconut or powdered sugar for dusting
  • Plant milk for brushing before baking

    Make the pastry: Mix flour and salt in a large bowl. Add cold cubed butter. Rub lightly into the flour until the mixture looks like coarse breadcrumbs — keep the butter in small visible chunks (this creates flaky layers!). Gradually stir in ice‑cold water, a little at a time, gathering gently into a rough dough. Do NOT knead. Shape into a rectangle, wrap, and chill in the fridge for 30 minutes.

    Fold & chill: Roll the chilled dough out on a floured surface into a long rectangle. Fold the bottom third up and the top third down (like a letter). Rotate 90°, roll out again, and fold once more. Wrap and chill another 30 minutes. Repeat this roll‑and‑fold process 2–3 times total for the flakiest result.

    Shape & fill: Roll the final dough out thinly into a large rectangle. Cut into 6 equal rectangles. Place a chocolate baton or generous chunk of chocolate near one edge. Roll up tightly from the chocolate side, tucking the ends underneath to seal. Place seam‑side down on a baking tray lined with parchment.

    Chill & brush: Chill the shaped rolls for 15 minutes before baking. Brush lightly with plant milk to help them brown beautifully.

    Bake: Preheat oven to 200 °C (400 °F). Bake for 15–18 minutes until puffed, deep golden, and crisp. If they brown too quickly, reduce heat to 180°C after 10 minutes.

    Finish: Let cool slightly — chocolate will be very hot fresh from the oven! Drizzle with melted chocolate mixed with coconut oil, then sprinkle with desiccated coconut or powdered sugar. Serve warm for the best experience!
