  • 1 tsp pure vanilla extract.. 2 tbsp melted coconut oil + extra for cooking

  • 200 g blueberries (fresh or frozen)
  • 2–3 tbsp maple syrup or coconut sugar (adjust to sweetness).. 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry).. 2 tbsp water
  • #To Serve;
  • Fresh blueberries.. Extra maple syrup
  • Coconut cream or yogurt (optional).. Desiccated coconut
