- 2 large handfuls arugula / rocket or mixed bitter greens
- 80 g fresh green peas (blanched briefly if fresh, or thawed if frozen)

- Pinch of sugar or maple syrup (optional, to balance acidity)

Make the vinaigrette: Whisk together lemon juice, zest, garlic, mustard, salt, pepper, and sweetener (if using). Slowly drizzle in the olive oil while whisking constantly until smooth and emulsified. Set aside.

Crisp the artichokes: Pat artichoke hearts very dry with paper towels — this helps them crisp up. Heat olive oil in a pan over medium‑high heat. Fry artichokes for 3–4 minutes per side until golden and crispy all over. Season lightly with salt and pepper, then set aside briefly.
