
Vegan Spiced Pear & Ginger Compote
Soft, tender chunks of sweet pear simmered gently with fresh ginger, warm spices, and just enough sweetener to bring out the fruitβs natural flavour. This comforting preserve is 100% vegan, with no dairy, honey, or animal products β perfect for spooning over porridge, pancakes, yoghurt, ice cream, toast, or serving alongside cakes and desserts. It has a lovely balance of mellow fruitiness, gentle warmth, and aromatic spice.

π Ingredients
- 6β7 ripe but firm pears (approx. 1β―kg), peeled, cored, and cut into 1β2β―cm chunks
- 40β60β―g coconut sugar or maple syrup (adjust to pear sweetness)
- 150β―ml water or apple juice
- 2β3 tbsp fresh ginger, peeled and finely grated or cut into thin matchsticks
- 1 cinnamon stick.. 1 star anise (optional, adds depth)
- 1 tbsp fresh lemon juice.. Β½ tsp vanilla extract.. Pinch of fine sea salt

Combine: Place pear chunks, sugar, water, ginger, cinnamon, star anise, lemon juice, salt, and vanilla into a wide saucepan. Stir gently to mix.

Simmer: Bring to a gentle boil over medium heat, then lower heat to low, cover partially, and simmer for 15β20 minutes. Stir occasionally until pears are soft but still hold their shape, and the liquid has reduced to a light syrupy consistency.

Adjust: Remove cinnamon stick and star anise. Taste and add more sweetener or lemon juice if needed; if too runny, simmer uncovered for a few more minutes.

Serve or store: Enjoy warm or cold. Spoon into sterilised jars and seal β keep refrigerated for up to 2 weeks, or process for longer shelf life.
