- 200 g high‑quality block vegan butter, softened to room temperature
- 2 tbsp fresh flat‑leaf parsley, very finely chopped.. 1 tbsp fresh chives, finely snipped
- 1 tsp fresh thyme or rosemary leaves, finely chopped (optional)
- 1–2 small garlic cloves, minced or grated very finely.. 1 tsp fresh lemon juice
- ÂĽ tsp fine sea salt (adjust if your butter is salted).. Freshly cracked black pepper, to taste
- 1 tbsp finely chopped fresh chives or parsley for garnish

Prep ingredients: Ensure the vegan butter is soft enough to mash easily but not melted. Wash, dry, and chop all herbs very finely so they spread smoothly.

Mix: Place softened butter in a bowl and mash with a fork until smooth. Add parsley, chives, thyme/rosemary, garlic, lemon juice, salt, and pepper. Stir and mash thoroughly until all herbs and seasonings are evenly distributed throughout.

Shape & chill: Lay a sheet of parchment or cling film on the counter. Spoon the mixture along the centre, roll it into a neat log or shape into a small dish, wrap tightly, and twist the ends to seal. Chill in the fridge for at least 30 minutes until firm and the flavours have blended.

Serve & store: Slice or scoop as needed. Keep refrigerated for up to 1 week, or freeze for up to 3 months.
