🛒 Ingredients

  • #Puff Pastry;
  • 1 sheet high‑quality vegan puff pastry (thawed if frozen)
  • 1 tbsp unsweetened plant milk (for brushing)
  • #Creamy Savory Filling;
  • 200 g firm silken tofu, drained well.. 3 tbsp nutritional yeast
  • 2 tbsp vegan cream cheese or thick coconut cream.. 1 tbsp olive oil
  • 1 tsp lemon juice.. ½ tsp garlic powder.. ½ tsp dried thyme or oregano
  • Salt and black pepper to taste.. Optional: 1 tbsp fresh chopped herbs (parsley, chives)
  • #Roasted Vegetables;
  • 1 medium zucchini, sliced lengthwise into thin strips
  • 1 red bell pepper, cut into wide flat strips
  • 1 small eggplant (optional), sliced thin.. 2 tbsp olive oil
  • Pinch of salt, black pepper, and dried rosemary
  • #Garnish;
  • Fresh microgreens or chopped herbs
  • A light drizzle of olive oil or balsamic glaze (optional)

    Prepare the pastry: Preheat oven to 200 °C (400 °F). Unroll the puff pastry sheet and cut it evenly into 3 equal rectangular portions. Place on a baking sheet lined with parchment paper, brush lightly with plant milk, and cover with a second sheet of parchment and another baking tray (to keep layers flat while baking). Bake for 15–18 minutes until golden and crisp. Remove and let cool completely on a wire rack — do not assemble while warm.

    Roast the vegetables: Toss zucchini, bell pepper, and eggplant with olive oil, salt, pepper, and rosemary. Spread on a baking sheet and roast at 180 °C (350 °F) for 12–15 minutes until tender and lightly caramelized. Set aside to cool.

    Make the savory cream: In a blender or food processor, combine silken tofu, nutritional yeast, vegan cream cheese/coconut cream, olive oil, lemon juice, garlic powder, and dried herbs. Blend until completely smooth and creamy. Season to taste with salt and pepper; stir in fresh herbs if using. Transfer to a piping bag or a resealable bag with the corner snipped off for neat piping.

    Assemble: Place one cooled pastry layer on a serving plate. Pipe evenly spaced dollops of the creamy filling across the surface, then arrange a layer of roasted vegetables on top. Add the second pastry sheet, repeat the piping and vegetable layering, then finish with the top pastry sheet. Pipe the remaining filling in neat rows on the top layer.

    Finish & serve: Garnish with fresh microgreens or herbs, and a light drizzle of balsamic glaze or olive oil if desired. Serve immediately while the pastry is still crisp.
