Vegan Almond Financiers

Financiers are elegant, classic French almond cakes: rich, moist, and buttery, with a fine, tender crumb and a delicious nutty sweetness, traditionally baked in small oval or round moulds. This 100% vegan version replaces egg whites and dairy butter with plant‑based ingredients, keeping the signature dense‑yet‑light texture, deep roasted almond flavour, and golden crisp edges without any animal products at all.

  • #Cake Batter;
  • 80 g blanched almond flour.. 40 g plain all‑purpose flour.. 100 g icing sugar
  • Pinch of fine sea salt.. 80 g vegan butter, melted and cooled slightly
  • 60 ml unsweetened almond or oat milk
  • 2 tbsp aquafaba (chickpea brine) or unsweetened applesauce
  • 1 tsp pure vanilla extract.. ½ tsp almond extract (optional, for deeper nutty flavour)

  • Thinly sliced flaked almonds.. Extra icing sugar for dusting

    Mix dry ingredients: In a medium bowl, whisk together almond flour, plain flour, icing sugar, and salt until completely smooth and evenly combined — sifting gives the finest texture if desired.

    Combine wet ingredients: In a separate bowl, whisk the cooled melted vegan butter, plant milk, aquafaba or applesauce, vanilla, and almond extract until fully blended and smooth.

    Make the batter: Pour the wet mixture into the dry ingredients. Stir gently with a spatula just until no dry flour remains — do not over‑mix, or the cakes will turn tough. The batter will be thick and glossy.

    Rest (optional): Cover and chill the batter for 15 minutes; this helps the cakes rise evenly and develop their signature soft crumb.

    Prep & bake: Preheat oven to 180 °C (350 °F). Grease financier moulds or a mini muffin tray lightly with vegan butter. Fill each mould three‑quarters full, then top with a few flaked almonds. Bake for 12–15 minutes until golden at the edges and spring back gently when touched.

    Cool & serve: Let cool in the moulds for 3–5 minutes, then carefully transfer to a wire rack to cool completely. Dust lightly with icing sugar before serving — perfect with coffee or tea.
