Prep the celery root: Peel away the thick, rough outer skin of the celery root using a sharp knife or heavy‑duty peeler. Cut the firm flesh into thin matchsticks or grate coarsely on a box grater. Toss immediately with fresh lemon juice — this stops the celery root from turning brown and preserves its bright, clean flavour and crisp texture.

Make the dressing: In a medium bowl, whisk together the vegan mayonnaise, both types of mustard, vinegar, caper brine, garlic (if using), salt, and pepper until smooth, thick, and well combined. Taste and adjust: add more lemon juice for extra tang, or a little extra mustard if you prefer a sharper kick.

Combine everything: Add the prepared celery root and chopped capers to the dressing. Toss thoroughly until every strip is evenly coated in the creamy mixture.
