  • 500 g fresh green asparagus, woody ends trimmed, spears chopped into pieces
  • 1 medium potato, peeled and diced (adds natural creaminess without dairy)
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • 700 ml low‑sodium vegetable stock
  • 100 ml unsweetened oat cream or coconut cream (optional, for extra richness)
  • Sea salt and freshly ground white pepper, to taste
  • 1 tsp lemon juice (to brighten and lift the flavour)

  • 2–3 whole cooked asparagus tips
  • Fresh parsley or chives, finely chopped
  • Light drizzle of extra virgin olive oil

    Sauté aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook gently for 4–5 minutes until soft and translucent. Stir in the garlic and cook for another 30 seconds until fragrant — do not let it brown, as this will overpower the delicate asparagus flavour.

    Simmer vegetables: Add the diced potato and chopped asparagus stalks (reserve the tender tips for garnish). Stir well to coat in the oil and aromatics. Pour in the vegetable stock, bring to a gentle boil, then lower the heat, cover, and simmer for 15–20 minutes until both the asparagus and potato are completely soft and tender when pierced with a fork.

    Cook reserved tips: While the soup simmers, blanch the set‑aside asparagus tips in boiling salted water for 2–3 minutes until bright green and just tender. Drain and rinse briefly with cold water to lock in their colour and crispness; set aside for serving.

    Blend & finish: Remove the soup from heat. Use an immersion blender or carefully transfer to a standard blender to blend until perfectly smooth and velvety. Stir in the plant cream (if using), lemon juice, salt, and white pepper. Reheat gently for 2–3 minutes — do not boil once blended.

    Serve: Ladle the warm soup into bowls. Top each serving with the reserved asparagus tips, a sprinkle of fresh herbs, and a tiny drizzle of olive oil. Enjoy immediately for the freshest flavour and best texture.
