- #Base & Fresh Fruit;
- 150 g fresh spinach leaves
- 100 g kale, stems removed and roughly chopped
- 2 medium oranges, peeled and sliced into rounds or wedges
- 1 pink grapefruit, peeled and cut into segments
- 1 small onion or shallot, finely diced
- #Crunch & Sweetness;
- 50 g pecans or walnuts
- 30 g blanched almonds or cashews, roughly chopped
- 2 tbsp raisins or sultanas,, 1 tbsp olive oil for cooking
- #Vegan Dressing;
- 2 tbsp extra virgin olive oil.. 1 tbsp fresh orange juice.. 1 tsp lemon juice
- ½ tsp maple syrup or agave nectar.. Salt and freshly ground black pepper to taste
- Optional: pinch of ground cinnamon or nutmeg

Toast the nuts: Heat a dry pan over medium heat. Add pecans/walnuts and almonds; toast for 2–3 minutes until fragrant, stirring often so they do not burn. Remove and set aside.

Sauté the base: Add 1 tablespoon olive oil to the same pan. Sauté the diced onion for 2 minutes until soft. Add kale first, stir‑fry for 2 minutes, then add spinach and cook for 1–2 minutes just until wilted but still bright green. Season lightly with salt and pepper.

Make the dressing: Whisk together olive oil, orange juice, lemon juice, maple syrup, salt, pepper, and spice (if using) until smooth.

Assemble: Arrange the warm greens on a platter. Top with orange slices, grapefruit segments, toasted nuts, and raisins.
