- 300β―ml extra virgin olive oil (good quality for best flavour)
- 8β10 fresh garlic cloves (peeled, left whole or halved)
- 2β3 sprigs fresh rosemary (or thyme/oregano)
- 1 tsp whole black peppercorns (optional)
- 1 small dried bay leaf (optional)

Prep: Wash and dry herbs thoroughly; peel garlic cloves and pat completely dry β any moisture will shorten shelf life. Sterilise a clean glass jar with a tight lid and let it dry fully.

Infuse gently: Place olive oil, garlic, herbs, and spices in a small saucepan. Heat over very low heat for 45β60 minutes β do not let it bubble or boil, keep it warm only. The garlic will turn pale golden and smell fragrant.

Finish: Remove from heat and let cool completely in the pan. Pour carefully into the prepared jar, leaving garlic and herbs in the oil for extra flavour, or strain if you prefer clear oil. Seal tightly.

Store: Keep in a cool, dark place for up to 1 month; refrigerate after opening and use within 2 weeks. Always use a clean dry spoon when taking oil out.
