- Pinch of fine salt,, 80 ml melted coconut oil or neutral vegetable oil
- 60 ml unsweetened plant milk (oat or soy works best)
- 1 tbsp apple cider vinegar,, 1 tsp pure vanilla extract

- 2 tbsp unsweetened cocoa powder,, 1 tbsp extra plant milk

Prep: Preheat oven to 170 °C (340 °F). Grease and line a 900 g loaf tin. Mix plant milk with vinegar and set aside for 5 minutes until slightly curdled.

Make base batter: In a large bowl, mix mashed banana, sugar, oil, curdled milk, and vanilla until smooth. Sift in flour, baking powder, baking soda, and salt. Stir gently until just combined — do not overmix.

Divide & flavour: Take roughly one‑third of the batter into a separate bowl. Sift in cocoa powder and add the extra milk; mix until smooth. Fold half the chocolate chips into the plain banana batter, and the rest into the chocolate batter.

Create marbled effect: Spoon alternating dollops of plain and chocolate batter into the loaf tin. Use a knife or skewer to gently swirl through the batter once or twice — do not mix fully, to keep the marbled pattern clear.

Bake: Bake for 45–50 minutes, until a skewer inserted into the centre comes out clean or with just a few moist crumbs. Leave to cool completely in the tin before slicing.
