Vegan Guisantes con Jamón

Guisantes con Jamón is a classic Spanish home‑style dish: tender sweet peas braised with savoury, smoky cured ham. This fully vegan version replaces pork ham with plant‑based smoked alternatives, keeping the comforting balance of sweet peas and deep smoky flavour — no meat, dairy, or animal products required. 🛒 Ingredients

  • 500 g fresh or frozen green peas.. 1 small onion, finely diced.. 2 garlic cloves, minced
  • 100 g vegan smoked seitan, smoked tofu, or king oyster mushrooms (diced, for the “ham” texture)
  • 1 tsp sweet smoked paprika.. 2–3 tbsp extra virgin olive oil.. 60–80 ml vegetable stock or water
  • Salt and black pepper to taste,, Fresh sage or parsley for garnish

    Sauté base: Heat olive oil in a pan over medium heat. Add onion and cook for 3–4 minutes until soft. Stir in garlic and smoked “ham” pieces; fry gently for 2–3 minutes until lightly golden and aromatic.

    Add peas: Tip in the peas and smoked paprika, toss well to coat. Pour in the stock or water — just enough to keep them moist.

    Simmer: Cover and cook over low heat for 8–10 minutes until the peas are tender but still bright and plump. Uncover for the last 2 minutes to let any excess liquid evaporate.

    Season: Taste and adjust salt and pepper.
