Agua de Valencia is a bright, sun‑kissed signature drink from Valencia, Spain — originally created to celebrate the region’s world‑famous oranges. This fully vegan version uses only plant‑based ingredients: fresh ripe orange juice, vegan‑certified sparkling wine, and spirit, with no animal‑derived finings, honey, or dairy. It is light, bubbly, perfectly balanced, and tastes exactly like sunshine in a glass.

- 400 ml freshly squeezed Valencia orange juice (or sweet ripe orange juice)
- 300 ml vegan Cava or dry sparkling wine
- 100 ml vegan orange liqueur (such as Cointreau, Triple Sec — check vegan certification)
- 1–2 tbsp agave syrup or maple syrup (only if oranges are not sweet enough)
- Plenty of ice cubes,, Extra orange slices for garnish

- Splash of sparkling water for a lighter version
- Fresh mint sprigs for decoration

Prep: Squeeze fresh oranges and chill all liquid ingredients well for best flavour and fizz.

Mix: In a large glass pitcher, combine orange juice, orange liqueur, and sweetener if needed. Stir gently to blend.

Finish: Just before serving, slowly pour in the sparkling wine or Cava and stir lightly — avoid over‑mixing to keep the bubbles intact.

Serve: Fill large wine or balloon glasses with plenty of ice, pour the drink over, and garnish with a fresh orange wedge. Enjoy cold.
